Divide beef into 4 equal balls. Flatten each into a thin patty, slightly wider than the bun. Season generously with salt.

Divide beef into 4 equal balls. Flatten each into a thin patty, slightly wider than the bun. Season generously with salt.

Cut potatoes into fries, soak in cold water 30 minutes, then dry thoroughly.

Heat oil to 160°C. Blanch fries 5 minutes. Remove and increase oil to 190°C. Fry again until golden and crispy.

Cook burger patties in a very hot cast iron pan for 2 minutes per side. Add cheese on top for the last 30 seconds.

Build burgers with sauce, lettuce, tomato, onion, and pickles. Serve with hot fries seasoned with sea salt.
