Melt butter with olive oil in a large heavy pot. Add onions and cook over low heat, stirring every 10 minutes, until deeply caramelised — this takes 45–60 minutes. Do not rush.

Add garlic, thyme, and bay leaf. Pour in wine and cook until evaporated.

Add beef stock and simmer 20 minutes. Season to taste.

Ladle soup into oven-safe bowls. Float toasted baguette slices on top.

Pile generously with Gruyère. Grill under a hot broiler until bubbling and golden.

Serve immediately with a warning: bowls will be very hot.
