Mix yeast into warm water with sugar. Let stand 5 minutes until foamy.

Combine flour and salt. Add yeast mixture and olive oil. Knead 8 minutes until smooth and elastic. Let rise 1 hour.

Divide dough in half. Stretch each into a 30cm round on a floured surface.

Spread tomato sauce, leaving a 2cm border. Scatter mozzarella, then arrange pepperoni.

Bake at 250°C / 480°F for 12–15 minutes until crust is charred at the edges and cheese is bubbling.

Top with fresh basil and a drizzle of olive oil before serving.
