In a large paella pan, heat olive oil. Season and brown chicken and rabbit. Remove and set aside.

In a large paella pan, heat olive oil. Season and brown chicken and rabbit. Remove and set aside.

Add tomatoes and paprika to the pan. Cook stirring for 5 minutes.

Add beans and return chicken. Pour in stock and saffron water. Bring to a boil and season generously.

Sprinkle rice evenly over the surface. Do not stir. Cook on high 10 minutes, then medium 8 more.

Rest the paella covered with foil for 5 minutes. Serve directly from the pan with lemon wedges.
