Cook over very high heat in a cast iron pan or grill, 3–4 minutes per side for medium.

Rest 5 minutes, then slice very thinly against the grain.

Warm tortillas directly over a gas flame until puffed and slightly charred.

Double up tortillas for each taco. Fill with beef, raw onion, and coriander.

Serve with lime wedges, salsa verde, and jalapeños.
