Cook penne in well-salted boiling water until al dente. Drain, reserving pasta water.

Cook penne in well-salted boiling water until al dente. Drain, reserving pasta water.

Melt butter with oil in a large pan. Add mushrooms and cook over high heat until golden, about 6 minutes. Season well.

Add garlic and thyme, cook 1 minute. Pour in cream and simmer 3 minutes until slightly thickened.

Add Parmesan and stir to combine. Add drained pasta and toss with a splash of pasta water.

Serve immediately with extra Parmesan and black pepper.
