Mix all marinade ingredients with chicken and marinate for at least 2 hours, preferably overnight.

Grill or pan-fry the chicken until lightly charred and cooked through. Set aside and cut into chunks.

Melt butter in a heavy pan. Add onion and cook until deep golden, about 15 minutes.

Add garlic and ginger and cook 2 minutes. Add tomatoes, garam masala, and chili. Simmer 15 minutes.

Blend the sauce until smooth. Return to pan, add cream, sugar, and salt. Simmer 5 minutes.

Add chicken to sauce and simmer 10 minutes. Garnish with coriander and serve with naan or rice.
