Sauté onions until deeply golden, about 20 minutes. Add garlic and ginger.

Add curry powder and garam masala. Cook 2 minutes, stirring constantly.

Add crushed tomatoes and simmer 5 minutes. Add beef and coconut milk.

Cover and cook on very low heat for 1.5–2 hours until beef is meltingly tender.

Season and serve with basmati rice, naan, and fresh coriander.
