Soak rice noodles in cold water for 30 minutes. Drain.

Soak rice noodles in cold water for 30 minutes. Drain.

Mix fish sauce, tamarind, and sugar to make the pad Thai sauce. Taste and adjust balance.

Heat wok over very high heat. Add oil and cook prawns until pink, 2 minutes. Push to side.

Add garlic and shallots, then noodles. Pour sauce over and toss to combine.

Make space, add eggs and scramble, then mix into noodles. Add beansprouts.

Serve topped with peanuts, spring onion, chili flakes, and lime wedges.
