Rub turkey all over with olive oil and mixed herbs. Push garlic under the skin.

Roast at 180°C for about 3 hours. In the last 45 minutes, add mushrooms and potatoes to the roasting pan.

Baste turkey every 30 minutes with its own juices.

Check internal temperature reaches 75°C in the thickest part of the thigh.

Rest 20 minutes, then carve. Serve with roasted mushrooms, potatoes, and pan drippings as gravy.
