Bring chicken to room temperature. Rub inside and out with olive oil, garlic, herbs, lemon, salt, and pepper.

Bring chicken to room temperature. Rub inside and out with olive oil, garlic, herbs, lemon, salt, and pepper.

Place in a hot roasting tin and roast at 200°C for 1 hour 30 minutes, basting halfway.

Rest covered for 15 minutes before carving.

Serve on a large platter surrounded by roasted potatoes and salad.

Make pan gravy from the drippings by adding stock and reducing.
